Made with purple cabbage, green mango, lettuce, pomegranate, and a light olive oil lemon dressing, it’s perfect for detox, weight loss, or just a clean eating lifestyle.
Ingredients
Salad Base:
• 1 cup purple cabbage, shredded
• 1 cup green cabbage, shredded
• 1 cup lettuce, chopped
• 2 tbsp spring onion, finely sliced
• ½ cup green mango, julienned (raw and slightly tangy)
• 2 tbsp fresh coriander, chopped
• ¼ cup pomegranate seeds
Dressing:
• 1 tbsp olive oil
• 1½ tbsp lemon juice (adjust to taste)
• ¼ tsp black pepper
• Salt to taste
• 1 tbsp green onion, finely chopped
• 1 tbsp coriander, finely chopped
Instructions
1. In a large bowl, mix all salad base ingredients together.
2. In a small bowl or jar, whisk together the olive oil, lemon juice, black pepper, and salt.
3. Stir in the chopped green onion and coriander into the dressing.
4. Pour the dressing over the salad and toss well to combine.
5. Let it sit for 5-10 minutes to absorb the flavors before serving.
