Lemon-Garlic Chicken & Veggie Tray Bake

🛒 Ingredients (4 servings):
• 1 lb chicken tenders, cubed
• 1 medium zucchini, cubed (~0.3 lb)
• 1 medium carrot, sliced (~0.2 lb)
• 2 cups shiitake mushrooms (~0.35 lb)
• 1.5 cups radish, sliced (~0.4 lb)
• 2 tbsp olive oil
• 1 tbsp garlic (minced or powder)
• 1 tbsp dried parsley
• Juice of ½ lemon
• Salt & pepper to taste
• Handful of fresh parsley, chopped (for garnish)
👩🍳 Instructions:
1️⃣ Preheat oven to 400°F (200°C).
2️⃣ Place chicken, zucchini, carrot, mushrooms, and radish on a lined oven tray in separate sections.
3️⃣ Drizzle olive oil and lemon juice evenly over all ingredients.
4️⃣ Sprinkle garlic, dried parsley, salt, and pepper across the tray.
5️⃣ Mix the vegetables together in their section directly on the tray, then mix the chicken separately in its section. Keep sections distinct.
6️⃣ Roast for 22–25 minutes, flipping halfway through for even cooking.
7️⃣ Cool slightly, divide into 4 containers, and top each with fresh parsley.
