✅ Ingredients Used:
– Eggs (5-6, boiled)
– Butter (for cooking and topping)
– Finely chopped Onion
– Finely chopped Tomato
– Green Chilies (finely chopped)
– Ginger-Garlic Paste
– Salt (to taste)
– Turmeric Powder – 1/2 tsp
– Red Chili Powder – 1 tsp
– Pav Bhaji Masala – 1.5 tsp
– Fresh Coriander Leaves
– Water (preferably warm or room temperature)
– 1 Egg for frying (for garnish)
🥘 Cooking Tools Needed:
– Clay Pot / Iron Kadai / Cast Iron Tawa (Non-Stick not recommended)
– Grater for eggs
– Lid for steam cooking
🍳 Recipe Steps:
Step 1:
Heat butter in a clay or cast iron pot. Let it melt gently.
Step 2:
Add finely chopped onions and sauté on low flame. Don’t brown them fully, just soften them slightly.
Step 3:
Add chopped green chilies and mix well.
Step 4:
Add chopped tomatoes and sauté just until they soften, but not mushy. Keep them a little chunky for texture.
Step 5:
Add the following spices:
– Salt as per taste
– Turmeric Powder
– Red Chili Powder
– Pav Bhaji Masala
– Ginger-Garlic Paste
Mix everything well and cook until the masalas release aroma.
Step 6:
Add a little warm or room temperature water to form a semi-gravy consistency. Avoid cold water as it affects taste and spice blending.
Step 7:
Grate the boiled eggs into the gravy. Use as many as needed (5-6 recommended). Stir and allow the grated eggs to absorb all flavors.
Step 8:
Garnish generously with fresh coriander leaves.
Step 9:
For topping:
Heat butter in a pan, crack one egg, and fry it (sunny-side up). Cover with lid for perfect cooking.
Step 10:
Place this fried egg on top of the Anda Ghotala mix for the Mumbai-style finish.
Step 11:
Serve hot as a complete meal. No roti, rice, or bread required – just this dish and your weight will drop magically while eating tasty food!
