Crisp & Easy Corn Fritters (No Fry)
🛒 Ingredients:
• 1 cup sweet corn kernels (boiled or steamed)
• 1 small onion, finely chopped
• 1-2 green chilies, finely chopped (optional)
• 2 tbsp coriander leaves, finely chopped
• ½ tsp grated ginger
• ¼ tsp black pepper powder
• ½ tsp red chili flakes (optional)
• Salt to taste
• 2 tbsp rice flour (for crispiness)
• 1 tbsp besan (gram flour) or whole wheat flour
• A pinch of baking soda (optional, for fluffiness)
• 1-2 tsp lemon juice
• 1-2 tbsp water (only if needed for binding)
• Oil spray or 1–2 tsp oil for greasing the pan

👩🍳 Method:
1. Mash half of the corn slightly using a masher or pulse briefly in a mixer for a coarse texture.
2. In a bowl, mix mashed corn, whole corn, onion, chilies, ginger, coriander, spices, rice flour, and besan.
3. Add salt and lemon juice. Mix well. Add a few drops of water only if the mixture feels too dry.
4. Shape into small flat fritters.
5. Heat a nonstick pan or tawa, grease it lightly with oil or use a brush/spray.
6. Place the fritters on the hot pan and cook on medium heat until golden and crispy on both sides.
7. Serve hot with green chutney, ketchup, or yogurt dip!
