Veg Masala Oats (Serves 4)
Ingredients:
* 1 tbsp ghee
* ½ tsp mustard seeds
* ½ tsp cumin seeds
* Curry leaves
* 1 chopped onion
* 1 tsp salt (adjust to taste)
* 2 chopped tomatoes
* ½ cup chopped carrots
* ½ cup chopped beans
* ¼ cup chopped capsicum
* Other vegetables of your choice
* ½ cup water (to cook veggies)
* 2 cups oats
* 2 cups water (for cooking oats)
* Fresh coriander leaves (for garnish)
Instructions:
1. Heat ghee in a pan. Add mustard seeds, cumin seeds, and curry leaves.
2. Sauté chopped onions until translucent.
3. Add salt and chopped tomatoes. Cook until soft.
4. Add chopped veggies and ½ cup water. Cover and cook until tender.
5. Add oats and 2 cups water. Mix well.
6. Cook on low flame for 10 minutes, stirring occasionally.
7. Garnish with fresh coriander leaves.
