🍏🥕 INGREDIENTS:
• 200 g active gluten-free sourdough starter (like rice sourdough)

• 20 g ground psyllium husk
• 10 g ground golden linseed (flaxseed)
• 550 g lukewarm water
• 100 g whole grain rice flour
• 100 g white rice flour
• 20 g finely ground almonds
• 20 g buckwheat flour
• 75 g tapioca starch
• 75 g potato starch
• 12 g sea salt
Oil for the loaf pan
Baking paper (parchment paper)
Loaf pan (30cm x 10cm / approximately 12 inches x 4 inches)
👉TIP FOR ACTIVATING SOURDOUGH STARTER
I activate my entire jar of sourdough starter before each bake and then weigh out the required amount of activated starter. I don’t weigh anything for the activation itself.
To each jar of sourdough starter, I add approximately:
• 2 heaped tablespoons of rice flour
• About 50 g of water (a small shot glass full)
• About 1-2 teaspoons of coconut sugar, maple syrup, or agave syrup. Honey would also work.
Stir everything together and leave it to sit relatively warm overnight (23-26°C / 73-79°F). As soon as enough bubbles have formed, the sourdough starter is ready for baking bread.
If you don’t want to activate the entire jar of starter, you’ll need the following amounts for 200g of activated starter:
• 100 g of inactive sourdough starter
• 50 g of whole grain rice flour
• 50 g of water
• 1 teaspoon of coconut sugar…
