Baked halloumi with chickpeas and greens recipe
* 2 x 400g tins chickpeas, drained and rinsed
* 400g cherry tomatoes
* 3 tbsp balsamic vinegar
* 2 tbsp olive oil
* 100g curly kale
* 225g lighter halloumi, sliced
* 130g fresh pesto
* 15g fresh basil leaves
* crusty bread, to serve (optional)
Chicken and herb bake with tomatoes recipe
* 600g (1lb) chicken breast fillets, skin on or off
* 4tbsp garlic and herb cream cheese
* ½tbsp oil
* 1tbsp breadcrumbs
* 250g cherry tomatoes
* rocket or mixed salad, to serve

* 2 cups shredded zucchini
* 2 cups shredded carrots
* 2 cloves garlic, minced
* 2/3 cup all-purpose flour
* 2 large eggs, lightly beaten
* 1/3 cup sliced scallions (green and white parts)
* 2 Tablespoons olive oil
* Sour cream or yogurt, for serving
