• 1.336 kg cod fillets, cooked and flaked
• 1 small potato (about 100g), boiled and mashed
• 1 whole egg + 1 egg white
• ½ cup green onion, finely chopped
• ¾ cup fresh parsley or cilantro, chopped
• 2 garlic cloves, minced
• 1 tbsp Dijon mustard
• ¼ cup breadcrumbs (or oat flour)
• ½ tsp salt
• ½ tsp black pepper
• ½ tsp paprika (or chili flakes, optional)

Instructions:
1. Cook the cod:Steam, bake, or poach the cod until fully cooked and flaky. Let it cool slightly, then flake it with a fork AND drain off excess moisture.
2. Prepare the potato: Boil the small potato until fork-tender, then mash it well. Let cool slightly.
3. Combine mashed potato, egg, egg white, Dijon mustard, garlic, green onion, herbs, and seasonings.
4. Add cod & breadcrumbs:
– If it’s too wet, add 1–2 more tablespoons of breadcrumbs/oat flour.
5. Chill:Refrigerate the mixture for 15–30 minutes to help it firm up.
6. Shape: Form into 20 patties
7. Air fry: Preheat air fryer to 375°F (190°C)
– Cook in batches for 8–10 minutes, flipping halfway, until golden and firm on the outside
