Speedy Sardine Linguini (serves 2)
650g cherry tomatoes
(whole)
300g tinned sardines in
olive oil (drained)
250g linguini
5 garlic cloves
2 white onions
1 red chilli
2 tbsp. capers
1.5 tbsp. dried oregano
1 tbsp. Herbes de
Provence
1 tbsp. tamari
1 tsp. sweetener
handful fresh parsley
sea salt & black pepper
extra virgin olive oil

Smokey Aubergine Coconut Lentils (serves 2-3)
150g beluga lentils (+ salt & 400ml water to cook)
2 aubergines
2 finger chilles (or chilli of choice)
200ml coconut milk
2 tbsp. tomato paste
2 small white onions/ 1 large
4 garlic cloves
1 inch thumb ginger
1 tbsp. cumin seeds or powder
10 cardamom pods (leave whole)
4 dried lime leaves
1 tbsp. garam masala
1 cup water
1 tbsp. ghee
1 tbsp. butter
handful fresh coriander
salt
