Start by soaking one cup of urad dal in water for about four hours. This is the base of our vada, giving it that perfect texture. After soaking, drain the dal and blend it into a smooth batter.

Now, let’s add in our star ingredient—finely chopped cabbage! Toss in half a cup, along with a tablespoon of ginger, one chopped green chili, and a handful of fresh coriander. Don’t forget to season with salt to taste.

Mix it all together until well combined. The batter should be thick but smooth. Now, heat some oil in a pan for frying.

Once the oil is hot, take a small portion of the batter and shape it into a donut. Gently drop it into the oil and fry until golden brown and crispy.

Repeat this process until all your batter is used up. Drain them on paper towels to remove excess oil.
