MACROS AND CALORIES PER SERVING (7 servings about 2 cups per)

INGREDIENTS;
– 2 pounds extra large shrimp peeled/deveined- seasoned salt, pepper, paprika, Italian seasoning.
– 1 table spoon sun-dried tomato oil
– 2 table spoons garlic
– ½ cup Cento sun-dried tomatoes diced
– 2 tablespoon tomato paste
– red pepper flakes to taste
– 1 tablespoon Italian seasoning
– ⅓ teaspoon paprika
– ½ teaspoon salt
– 2 cups fresh spinach
– 2 tablespoon minced onion
– 2 cups chicken or vegetable broth
– 1 cup heavy cream
– 1/2 cup parmesan cheese
– Fresh basil chopped for garnish
– 12 oz rigatoni
INSTRUCTIONS;
– Boil the pasta according to the package directions for al dente while you cook the shrimp.
– in a large pot or dutch oven on med temp, heat sun dried tomato oil and garlic until fragrant. Add your cleaned and peels shrimp, top with the seasonings listed above, and cook 2 min each side.
– Once your shrimp is cooked remove from the pot and set aside for later use.
– Add tomato paste, red pepper flakes, cream, chicken stock, sun dried tomatoes, seasonings above, spinach and cover for 4-5 mins to wit the spinach. Add your noodles and let simmer with the top off for 2-3 mins before re adding your shrimp.
– stir in your cheese, Garnish with fresh basil, and enjoy.
