INGREDIENTS:
– 2 lbs boneless skinless chicken breast
– 2 limes (or about 1/3 cup lime juice)
– 2 tablespoons olive oil
– 1/4 cup cilantro, chopped
– 1 tablespoon (20 grams) honey
– SEASONINGS:
– 2 teaspoons smoked paprika
– 2 teaspoons chili powder
– 2 teaspoons garlic powder
– 1 teaspoon ground cumin
– 1 teaspoon onion powder
– 1 teaspoon ground coriander
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon cayenne pepper (optional)
– GARNISH
– Additional cilantro
INSTRUCTIONS:
1. On a cutting board, trim off any excess fat on your chicken and butterfly them. Pound them to thin them out if necessary.
2. In a large bowl or plastic bag, add your lime juice, oil, minced garlic, chopped cilantro, honey and seasonings and mix well.
3. Add your chicken breasts to the marinade and mix well.
4. If you’re short on time, you can skip this step, but it’s recommended to place in a refrigerator for at least 2 hours, preferably overnight if possible.
5. Take out a skillet or grill pan and coat with non-stick cooking spray
6. Cook your chicken breasts on medium high heat for 5 to 7 minutes per side.
7. Serve and garnish with additional cilantro.
