Home made desi style Pasta!
Ingredients:
Soaked or boiled chickpeas
Tomatoes
Onions
Garlic
Spinach
Salt & turmeric
Milk + vinegar (to make paneer)
Durum wheat pasta
Veggies of your choice (I used capsicum & mushroom)
Butter
Oregano, chilli flakes & pepper
Method:
1. Pressure cook chickpeas, tomatoes, onions, garlic & spinach with salt + turmeric (3-4 whistles).
2. Once cooled, blend into a smooth paste.
3. Make fresh paneer by curdling milk with vinegar (save the leftover water).
4. Sauté veggies in butter, add the chickpea-spinach paste, and some of the paneer water for extra creaminess.
5. Let it cook down into a thick, rich sauce.
6. Add boiled durum wheat pasta, mix well, and season with oregano, chilli flakes & pepper.
That’s it super creamy, full of nutrients, and even your little one will love it!
