High-protein shrimp coconut noodle soup made with German supermarket finds! Packed with Dinkel Mie Nudeln, red curry paste, shrimps, veggies & 32g protein. Easy, spicy, super flavorful & fiber-rich lunch idea!
INGREDIENTS:
125g dmBio Dinkel Mie Nudeln (From Dm)
200g frozen shrimp (ja! Tiger prawns from rewe, thawed)
1/4 head broccoli, chopped into florets
1. 5 carrots, julienned
½ red bell pepper, thinly sliced
1.5 heaped tbsp red curry paste (from Rewe)
250 ml coconut milk (from Rewe)
750 ml water
1.5 tsp Gemüsebrühe powder (vegetable stock or chicken stock or beef stock) (from Aldi)
1 tbsp soy sauce (from Rewe)
1 tsp neutral oil (e.g. sunflower or canola)
1 boiled egg
🔹 Fiber & Crunch Boost:
1/2 tbsp ground flaxseed (stir in at the end)
🍏 Fiber Dessert:
1 apple after the meal
METHOD:
1. Heat a bit of oil in a pot. Sauté 1.5 tbsp red curry paste along with minced garlic and ginger for 30–60 seconds to release the aroma.
2. Add thawed prawns and cook for 3–4 minutes until pink. You can use chicken or beef as a substitute.
3. Pour in 750 ml water and 250 ml coconut milk. Add 1 heaped tbsp vegetable broth powder (Gemüsebrühe) and bring to a BOIL. You can also use chicken stock, beef stock or skip this altogether if you don’t have.
4. Add carrots and red bell pepper. Let it cook for a minute.
5. Drop in Dinkel Mie Nudeln directly into the pot. Cook everything together for about 4 to 5 minutes until the noodles are tender.
6. Stir in 1 tbsp soy sauce. Taste and adjust with salt only if needed.
7. Plate the soup. Top with steamed broccoli and sprinkle with roasted flaxseed powder for a fiber boost.
8. Serve hot — and enjoy an apple on the side for extra fiber and nutrition!
