This paratha brings together the lightness of lauki which is full of water content and fibre with the richness of paneer, adding protein to make the meal more filling and balanced. Ingredients:
Grated – Lauki ( bottle gourd ) , paneer and ginger
green chillies, finely chopped
Spices: kalonji, amchur, jeera powder, dhaniya powder, red chilli powder, salt to taste

Whole wheat dough (for rolling)

How I made it:

Grate the lauki and squeeze out excess water using a muslin cloth or clean kitchen towel.

Add grated paneer, ginger, chillies, and all the spices to the squeezed lauki. Mix everything well.

Roll out small dough balls into discs, place a spoonful of the stuffing in the centre, seal and gently roll into parathas.

Cook on a hot tawa with a little ghee or oil until golden on both sides.

Pair with curd or chutney for a comforting, wholesome meal that doesn’t weigh you down.
