-3 lbs chicken thighs, boneless and skinless
-2 tsp olive oil
-2 tsp onion powder
-2 tsp garlic powder
-2 tsp smoked paprika
-1/2 tsp salt
-1/2 tsp pepper

Instructions:
-mix ingredients together in a large bowl
-place on a wired baking rack; roast at 400F for 30 min until internal temp is 165F
-rest for 10 min; cut into bite-sized pieces

Ingredients:
-2 lbs baby potatoes, quartered
-2 tsp olive oil
-1/2 tsp salt
-1/2 tsp pepper
