PERUVIAN CHICKEN WITH GREEN SAUCE

MARINADE INGREDIENTS;
– 8 chicken thighs
– 1 table spoon olive oil
– 3 table spoons vinegar
– 1 table spoon honey
– cumin, smoked paprika, salt, pepper, 1 table spoon minced garlic
SAUCE ingredients;
– 3 whole jalapeños (if you don’t like super spicy seed and core them)
– zest from one lime
– 1 cup fresh cilantro
– juice from 1 whole lime
– 1 table spoon olive oil
– 1 table spoon honey
– salt, pepper,
– 1 table spoon minced garlic
INSTRUCTIONS;
1. Pre heat your oven to 400 degrees f
2. Put your chicken thighs in a gallon zip lock bag and add the above ingredients. Place in the fridge for 20-30mins before baking on 400 degrees for 23-25mins.
3. make your sauce by combining the above ingredients in a blender, blend, and set aside.
4. Once chicken is cooked slice and place on top of a bed of rice and veggie of choice! Enjoy!
