INGREDIENTS:

Mango Salad:
1 Cup (165 g) sliced ripe mango
¾ Cup (90 g) sliced cucumber
½ Cup (50 g) sliced red bell pepper
1 & ½ Tbsp Avocado oil
1 Tbsp Maple syrup
1 & ½ Tbsp Lemon juice
1 Tsp Red chili flakes
½ tsp Salt
½ Cup (65 g) of pomegranate seeds
½ Cup (10 g) Finely chopped coriander
¼ Cup (30 g) pecans

Mixed bean salad with green goddess dressing:
1 Small bunch (35 g) of fresh coriander
1 Cup (30 g) spinach
¼ Cup (10 g) fresh mint
2 Small cloves of garlic
¼ Cup (60 g) greek yogurt
1 Tbsp Olive oil
½ Tbsp Maple syrup
1 Tbsp Lemon juice
½ Cup (50 g) finely chopped red bell pepper
½ Cup (65 g) finely chopped red onions
450 g Mix beans
½ Cup (45 g) chopped green onions
Salt to taste
Black pepper

Crunchy Edamame and Cucumber salad:
2 Tbsp Toasted sesame oil
1 Tbsp Soy sauce
1 Tbsp Rice vinegar
1 Tbsp Maple syrup
½ Tsp Red chili flakes
1 Tbsp sesame seeds
4 Cups (120 g) chopped spinach
1 Cup (220 g) of coleslaw or shredded cabbage
½ Cup (52 g) chopped cucumber
1 Cup (150 g) of frozen and thawed edamame
½ Cup (50 g) shredded carrot
½ Cup (45 g) chopped green onions
