This bread contains whole grain and bread flours, each with its own unique qualities. I also added a mix of seeds to enhance the flavor and amazing aroma of the bread.
This blend provides an abundance of fiber for digestive health, essential vitamins like B vitamins for energy, and minerals such as iron and magnesium to support overall well-being. Together, they offer a hearty, nutrient-dense base perfect for flavorful and healthful baking.
Sourdough starter:
– 80 g water
– 50 g sourdough starter
– 80 g bread flour
Ingredients for 3 loaves of bread:
– 630 g of water (+20-25 g additional)
– 150 g whole grain flour
– 750 g bread flour
– 180 g sourdough starter
– 18 g salt
– 30-40 g mix of seeds for cover the dough(optional)
Here’s a refined summary of my sourdough bread-making process , PART 1:
1. Starter preparation is done in the morning and peaks by afternoon.
2. Flour, malt and water are mixed and rested for 30 minutes during the autolyse to develop gluten.
3. All ingredients are incorporated in a mixer as demonstrated step-by-step in the video.
4. The dough ferments at room temperature for 2.5–3 hours during warm fermentation and then pre-shaped
This method creates a light, digestible, and nutritious loaf with a rich flavor profile. Perfect for homemade bread!
