INGREDIENTS

#1 Pesto Chickpea Wraps 1:11

1 can chickpeas (400g = 14oz)
2 ½ tbsp unsweetened soy yogurt
2 ½ tbsp store bought vegan pesto
1-2 tbsp fresh lemon juice
salt, pepper to taste

2 large tortillas or 4 smaller ones
1-2 tomatoes, cut into slices
greens of choice (baby spinach or baby arugula)
optional: vegan cheese, vegan chili mayo, sesame seeds, fresh basil

#2 DIY Instant Noodles 2:44

~ 5 tbsp dried soy granules
½ cup or 1 handful of quick cooking vegetables (raw coleslaw mix, broccoli florets, chopped pak choi…)
1 serving noodles of choice*
1 spring onion
1 tsp agave, rice or maple syrup
1 ½ tbsp light soy sauce, more to taste if needed
1-2 tbsp fresh lime juice or 2 tsp white wine vinegar
1-2 tsp sesame oil
1 tsp crispy chilli oil
salt to taste, if needed
1-2 handfuls fresh spinach
sesame seeds, cilantro for the top

*I did 200g fresh udon, you could do 50 – 100g dried rice noodles/soba/dried udon…

#3 Sundried Tomato Beans 4:29

1 onion, minced
2 cloves garlic, minced
2 tbsp oil from the sun dried tomato jar
3-4 tbsp sundried tomatoes (ideally half dried tomatoes), chopped
⅔ cup unsweetened soy or oat cream (160ml)
1 can white beans (400g = 14oz)
2 handfuls fresh spinach, roughly chopped
¼ cup (60ml) water
2 tbsp fresh lemon juice, or to taste
1-2 tsp soy sauce, or to taste
salt, pepper to taste

also: fresh bread, herbs, sesame seeds

#4 Sweet Chili Tofu Bowl 6:10

200g firm tofu (7oz)
1 tbsp cornstarch
pinch of salt
1 tbsp veg oil
1 tbsp soy sauce
2 1/2 tbsp sweet chili sauce
1 spring onion

for the salad:
3 tbsp unsweetened soy yogurt
2 tsp vegan mayo
1-2 tsp sweet chili sauce
1-2 tsp white wine vinegar
1 tsp soy sauce
salt, pepper to taste
to adjust consistency 1-3 tsp water, if needed

1 baby romaine
3 handfuls coleslaw mix

Also:
2 servings cooked rice
sesame seeds for serving

#5 Fancy Date Bowl 8:54

1 handful dates (deglet noor)
1 1/2 tbsp olive oil
sprinkle of flakey sea salt

can be served with thick vegan yogurt, oats, cereal of choice, peanut or almond butter, drizzle of maple syrup and olive oil

→ serves 1
