A vibrant, crunchy, and tangy salad that’s as healthy as it is delicious!
Packed with grated raw papaya, fresh herbs, baby tomatoes, and a zesty tamarind-jaggery dressing, this Thai-inspired salad is full of flavor, fiber, and freshness. Perfect as a light meal or a refreshing side dish!
Ingredients:
• Raw Papaya – 1 Cup (Long julienne)
• Carrot – 1/2 cup (Long julienne)
• Baby Tomatoes – 10 -11 (Halved)
• Green Chilies – 1-2 Finely Chopped (adjust to taste)
• Fresh Mint Leaves – 8-10 Roughly chopped
• Coriander leaves – 2 tbsp (chopped)
• Roasted Peanuts – 3 tbsp (roughly crushed)
• Roasted Sesame Seeds – 1 tbsp
• Tamarind Pulp – 1 tbsp
• Jaggery Powder – 1 tbsp
• Soy Sauce – 1tsp
• Salt – To taste
• Juice of ½ lemon (optional for extra tang)

👩‍🍳 Recipe:
1. In a large mixing bowl, combine grated or julienne raw papaya and grated/ julienne carrot.
2. Add fresh elements: Toss in the baby tomatoes, mint leaves, coriander, and chopped green chilies.
3. Add the dressing: tamarind pulp, grated jaggery, soy sauce, and a pinch of salt.
4. Stir well the salad mixture and toss everything gently to coat.
5. Add crunch: Sprinkle in crushed roasted peanuts and roasted sesame seeds.
6. Taste & adjust: Add lemon juice if you want extra tanginess. Adjust salt or jaggery as per your taste.
7. Serve Fresh for best crunch and freshness!
