🍛 Homemade Chicken Pineapple Thai Curry 🍍
This high-protein curry is the perfect balance of sweet and savory! Family-friendly, anti-inflammatory, and so easy to make.
Ingredients:
• 1 lb chicken tenders, cut into pieces
• 2 tbsp olive oil
• 1/2 onion, chopped
• 1 garlic clove, minced
• 1/4 tsp salt
• 1 tsp ginger powder
• 2 tsp curry powder
• 1 red bell pepper, sliced
• ½ cup green peas (frozen or fresh)
• 2 cups pineapple chunks (fresh or canned, drained)
• 1 can (13.5 oz) coconut milk
• Cooked rice for serving
🥄 Instructions:
1. In a small bowl, mix salt, ginger powder, and curry powder.
2. Sprinkle the spice mix over the chicken and massage well with your hands to coat evenly.
3. In a pan, heat olive oil and sauté onion and garlic until fragrant.
4. Add the seasoned chicken and cook until no longer pink.
5. Stir in red peppers, green peas, and coconut milk.
6. Simmer for 10–15 minutes until veggies are soft.
7. Add pineapple chunks and cook for 5 more minutes.
8. Serve hot over rice and enjoy!
