This oatmeal bread is so tasty! It`s healthy, without any sugar added and no yeast needed. It`s really easy to make with no rising time and just a few ingredients. Here`s what you need….

Healthy Oatmeal Yogurt Bread (No Yeast, No Sugar)
INGREDIENTS (1 small loaf, 8-10 slices)
1 cup + 2 tsp (250 grams) Greek yogurt or quark
2 eggs (110 grams)
2 tbsp (16 grams) mild olive oil
2 + 1/2 cup (250 grams) oat flour*
1 tbsp (8 grams) baking powder
1/2 tsp (3 grams) salt
2 tbsp (10 grams) mixed seeds and nuts of choice**
iNSTRUCTIONS
1. Grease a round 16 x 7 cm (6 x 2,5 inch) oven dish with some mild olive oil. Line the bottom with some parchement paper and set the dish aside.
2. Pre-heat the oven on 180C (360F).
3. Take a large bowl and pour the greek yogurt, eggs and mild olive oil into it. Mix with a whisk into a creamy mixture.
4. Add the oat flour, baking powder and salt. Stir with a spatula or spoon until all ingredients are fully incorporated into a slightly sticky bread dough.
5. Transfer the dough into the oven dish. Distribute it evenly with a spatula or back of a wet spoon.
6. Sprinkle the mixed nuts and seeds on top of the dough. Gently press them into the batter with the back of the spoon. This will prevent them from falling off to much after baking.
7. Place the dish in the pre-heated oven and bake the bread for 45 minutes on 180C (360F).
8. Take the dish out of the oven and let the bread cool on a rack until lukewarm or completely cooled.
9. Transfer the bread to a cutting board and slice into slices or pieces of preference. And enjoy!

* I`m using gluten free oat flour here. So the texture might be a bit different if you`re using regular oat flour.
** I`m using a mix of flaxseeds, sesame seeds, walnuts and cashews.
