Ingredients:
3–5 small ripe tomatoes, cut into bite-sized pieces (400–500 g)
2 cucumbers (about 300-500 g)
2 small onions, thinly sliced
2 avocados, peeled and cut
into bite-sized pieces
2 tbsp lemon juice
2 tbsp olive oil
3 garlic cloves, crushed
1/4 cup fresh coriander
leaves, chopped
Salt and pepper, to taste
🥗 Instructions:
Add the chopped tomatoes, cucumbers, onions, and avocados to a large mixing bowl.
Sprinkle in the fresh coriander (or any herbs of your choice).
Drizzle olive oil and lemon juice over the ingredients.
Add the crushed garlic and gently toss everything together to combine.
Season with salt and pepper just before serving.
Serve immediately and enjoy your fresh, healthy salad!
Use any fresh herbs you like. A mix of basil and parsley adds great flavor.
