Ingredients:
35g Plain Flour
1 Tsp Baking Powder
40g Coconut Flour
1/2 Tsp Salt
40g Cocoa Powder
50g Natural Sweetner/Low Calorie Sweetener (Natvia 100% Natural Sweetener)
1 Scoop Whey/Casein Blend Protein Powder (PEScience Vanilla)
1 Tsp Vanilla Extract
180g Low Fat Greek Yoghurt
120g Pumpkin PurΓ©e
1 Egg
50ml – 100ml Skim Milk

Oreo Frosting:
180g Vanilla Yoghurt (YoPro Vanilla)
8g Sugar Free Vanilla Pudding Mix (Simply Delish Sugar Free Vanilla Pudding Powder)
1 Crushed Oreo (half in the frosting & half sprinkled on top)
40g Light Whipped Cream

Instructions:
* In a bowl add plain flour, baking powder, coconut flour, salt, cocoa powder, zero calorie sweetener, a whey casein blend protein powder & mix
(using a whey casein blend is very important to ensure it cooks properly & doesn’t turn out dry)
* Now add vanilla extract, low fat greek yoghurt, pumpkin puree, 1 egg & mix well. Slowly add drops of milk while mixing until the texture is thick like shown in the video.
* Slightly wet your hands & form 4 equal cookies, place them on a baking tray with baking paper & oven bake at 170C/350F for 18 – 22 minutes.
* To make the oreo frosting in a bowl mix together vanilla yoghurt, sugar free pudding mix, crushed oreo & light whipped cream until you reach the perfect frosting texture.
* Let the cookies cool down completely before equally distributing the frosting across all 4 cookies, sprinkle crushed Oreo on top of each one & enjoy! Store in the fridge.
