Cozy, nourishing, and secretly packed with 15g of plant protein and 7g of fiber, it’s the perfect little something sweet to wind down a hot summer day. I love topping mine with a scoop of dairy-free ice cream while it’s still warm 💌

Recipe (Serves 1)

Filling:
• 1 cup mixed berries (fresh or frozen)
• 1 tsp maple syrup
• Squeeze of lemon juice
• 1/2 tsp tapioca starch or cornstarch

Crumble topping:
• 1 tbsp rolled oats
• 1 tbsp almond flour
• 2 tbsp vegan vanilla protein powder (important to use one you like the taste of!)
• 1 tsp maple syrup
• 1/2 tbsp melted vegan butter
• Splash of non-dairy milk
• Pinch of sea salt

Mix the filling ingredients and add to a small baking dish. In a separate bowl, mix crumble ingredients and sprinkle over the top. Bake at 350°F for 20–22 minutes, until golden on top. Enjoy Xx
