RECIPES (I unfortunately couldn’t put all of them here because of character limits, but I’ll think of a way to get them all to you asap!!)

Tofu & Eggs (breakfast)
– 80g tofu, cut into small pieces and fried in a pan with butter and paprika powder
– Adding 2 eggs and salt, scrambling
– 2 big tbsp cottage cheese
– 1 bell pepper cut into slices
– Sprinkling pumpkin seeds on top

Salad & Salmon Rye Bread (lunch)
– Big handful of kale, softly steamed on low heat
– Chopping 1/2 cucumber, 1/2 bell pepper, handful of cherry tomatoes
– Adding around 30g of black beans
– Generous amount of feta cheese
– dressing: olive oil, apple cider vinegar, salt and Italian herbs
– One slice of rye bread, toasted
– 2 tbsp cottage cheese
– 1 slice smoked salmon (sprinkling lemon juice and salt on top)

Homemade burritos (dinner)
– 500g organic minced beef, fried in a pan with butter and 1 bell pepper (cut into fine slices – ideally you also add 1 onion); seasoning with salt, pepper, garlic powder and paprika powder
– Adding 100g black beans
– guacamole: 1,5 avocados, mixed with salt, lemon juice, and one big tbsp of Greek yogurt
– Handful of cherry tomatoes cut into small pieces
– Whole wheat tortillas

Summer dessert:
– Strawberries
– 150mg Kefir
– Almonds & cashews

Scrambled oat pancakes (breakfast)
– 1 banana, mashing it with a fork
– 4 tbsp oats
– 1 heaped tbsp cottage cheese
– 2 eggs
– 1 tbsp chia seeds
– Salt
– (Opt. also ceylon cinnamon)
– Mixing it into a dough
– Pouring it into a pan with a bit of butter, then scrambling it until golden brown
– Adding strawberries, blueberries, and peanut butter on top

Summer Rolls (lunch)
– Chopping 80g Tofu, frying it in a pan with butter
– Slicing 1/2 of a mango and handful of cherry tomatoes into very small pieces, adding salt and olive oil
– Cabbage salad mix, adding apple cider vinegar and salt
– 2 rice papers, adding all the fillings
– Peanut butter as a sauce on top

Matcha Chia Pudding (breakfast)
– 3 tbsp Chia
– 2 tsp matcha powder (from Club Aurea https://clubaurea.com/discount/nicole10)
– Blending it with 150ml Kefir, letting it soak for min 15 minutes in the fridge
– Topping it with mango, strawberries, 1 tbsp Greek yogurt and 1 tsp peanut butter

Cheesy Sourdough (lunch)
– 2 scrambled eggs
– 1 slice sourdough bread topped with cottage cheese and gammel knæs

Kaiserschmarrn (shredded pancake dessert)
– Separate 4 medium eggs: yolks into a mixing bowl, whites into a separate bowl
– Whip the egg whites with a hand mixer until stiff, then putting it in the fridge
– To the egg yolks, add:
* 1 packet bourbon vanilla sugar
* 1 pinch of salt
* (Optional: 60 g sugar if you want it sweeter — I skipped it here to make it less unhealthy)
– Gradually add, alternating:
* 125 g flour (I used all-purpose flour (type 405)
* 300 ml whole milk (3.5–3.8% fat)→ Mix until smooth
– Add 75 ml sparkling mineral water, stir briefly to loosen the dough (the dough will be thin — that’s correct!)
– Gently fold in the whipped egg whites with a spatula
– In a large pan (32 cm diameter), melt 40 g butter over medium heat
– Pour all the dough into the pan and cook for about 5 minutes, lifting the edge occasionally to check for a golden underside
– Quarter the pancake using a spatula, flip each section, and cook another 5 minutes until golden and cooked through
– Tear into bite-sized pieces using two spatulas and let them brown slightly in the pan
– Dust with powdered sugar before serving
– Add applesauce or plum/berry compote on the side
