Mexican Burrito Bowl !!

Serves 3

Saute veggies :
1 tbsp olive oil
1/2 cup yellow & red bell pepper, sliced
1/2 cup zucchini
1 onion, sliced
Salt to taste
1 tsp oregano
Heat oil in a pan. Add in the bell peppers & onions. Add in the salt & oregano & saute till the onions brown a little. Remove from heat & keep aside. Can use veggies of choice

Corn salad
1 tsp olive oil
3/4 cup corn
1/4 cup coriander leaves
Salt to taste & chilli powder
Squeeze lemon juice
Heat oil in the same pan. Add in the corn, cook add salt, chili powder & coriander. Saute till it slightly browns. Take it off heat & keep aside.

Herbed rice :
1 cup rice cooked
1 tsp chopped garlic
2 tsp butter or oil
1/4 cup coriander
Salt to taste
Chilli flakes
Squeeze lemon juice
Add the rice, coriander & salt to the same pan. Mix it well & take it off heat. Keep aside.

Rajma :
1 tbsp oil
1 bay leaf
1 onion, finely chopped
1 tomato, finely chopped
2 tsp ketchup
Salt to taste
1 cup kidney beans, boiled
1/2 cup water
2 tsp Kashmiri red chili powder
2 tsp cumin powder
Water 1/2 cup

Heat oil in a pan. Add in the bay leaf & onions & saute for 2 minutes. Add in the tomatoes & salt & cook till the tomatoes soften. Add in the kidney beans & & smash the kidney beans little. Add all spices & cook for 2-3 minutes. Add water and let it cook for a while

Salsa
1/2 onion, finely chopped
2 tomato, finely chopped
2 green chilli, finely chopped
3 tbsp coriander, finely chopped
1 tbsp lemon juice
Salt to taste
1/4 tsp pepper powder
2 tsp ketchup or sriracha sauce
Mix all the ingredients together.
You can also add all the ingredients to a chopper and chop it up finely. Then add lemon juice and salt.

Healthy sour cream-
1/2 cup hung curd
1tbsp Fresh Cream optional
1tsp lemon juice or more
Salt pinch

Assembly
In a large bowl, add in the rice, sauteed veggies, kidney beans, sour cream, corn & salsa. Top it with some lettuce optional, cheese, Nachos if you have & tobasco & enjoy 🙂
