Welcome to Day 1 of my Weight Loss Journey!
Tonight’s healthy and satisfying dinner includes:
✅ Protein-rich Moong Dal Khichdi
✅ Low-calorie Cabbage Stir Fry
✅ Cooling Cucumber Raita
Serve This Meal Together:
• 1 medium bowl khichdi
• ½ cup fry cabbage
• ½ cup cucumber raita
Cucumber Raita
Ingredients:
• ½ cup low-fat curd (whisked)
• ½ cup grated or finely chopped cucumber
• Salt to taste
• ¼ tsp roasted cumin powder
• Chopped mint or coriander (optional)
Instructions:
1. Mix curd, cucumber, salt, and cumin powder in a bowl.
2. Garnish with mint or coriander.
Moong Dal Khichdi (Serves 2)
Ingredients:
• ½ cup yellow moong dal
• ½ cup rice (use brown rice or broken wheat for extra fiber, optional)
• 1 tsp ghee or ½ tsp oil
• ¼ tsp jeera (cumin seeds)
• 1 small onion, chopped (optional)
• 1 small tomato, chopped
• ½ inch ginger, grated
• ¼ tsp turmeric
• Salt to taste
• 3 cups water
• Optional veggies: carrot, beans, peas (finely chopped)
Instructions:
1. Wash rice and moong dal together. Soak for 15–20 minutes.
2. Heat oil/ghee in a pressure cooker or heavy pot.
3. Add cumin seeds, ginger, and optional onion. Sauté 1–2 mins.
4. Add tomato and turmeric. Cook until soft.
5. Add chopped veggies (if using), soaked rice-dal, salt, and water.
6. Pressure cook for 2–3 whistles, or simmer in a pot until soft.
7. Mash slightly and serve hot with ghee (optional: ¼ tsp).
Cabbage Stir-Fry (Dry Sabzi)
Ingredients:
• 2 cups finely shredded cabbage
• 1 small onion, sliced (optional)
• 1 green chili, slit or chopped (adjust to taste)
• ½ tsp mustard seeds (rai)
• ½ tsp cumin seeds (jeera)
• A pinch of hing (asafoetida)
• ¼ tsp turmeric powder
• Salt to taste
• 1 tsp oil
• Fresh coriander leaves for garnish
• Optional: ½ tsp lemon juice or grated coconut (for South Indian flavor)
Instructions:
• Heat oil in a non-stick or iron pan.
•Add mustard seeds; let them splutter.
•Add jeera, hing, and green chili.
•Add sliced onion (if using); sauté for 1–2 mins until soft.
•Add shredded cabbage, turmeric, and salt.
•Mix well and cook uncovered on medium heat for 5–7 mins. Stir occasionally.
•Don’t overcook — cabbage should stay slightly crunchy.
•Turn off the heat. Add a squeeze of lemon juice or garnish with coriander.
