Ingredients (for 4 sandwiches)
3 boiled eggs (chopped or sliced)
1 small onion (finely chopped)
1 small tomato (deseeded, finely chopped)
2 tbsp grated carrot
1 tbsp chopped capsicum (any color)
2 tbsp mayonnaise or Greek yogurt
½ tsp mustard sauce (optional – gives a punch!)
¼ tsp black pepper
3-4 green chilli (finely chopped)
1/2 tsp grated ginger
Coriander leaves
Salt to taste
1 tsp butter or ghee
bread slices (multigrain, white or brown)
🍳 Method
Mash or slice boiled eggs (depends on the texture you want).In a bowl, mix chopped onion, tomato, capsicum, carrot, and eggs. Add curd, mustard (optional), pepper, chilli, salt, and turmeric.
Mix well to make a spicy, creamy filling. Add the egg-veggie mixture and close with another bread slice. Toast on a pan with butter until golden brown and crisp.
