For the roasted carrots:
1 1/2 lbs baby carrots – or chopped regular carrots
1/4 cup salted butter, melted
3-4 tbsp brown sugar
1 tsp cinnamon
1/2 tsp salt
Roast the carrots at 425 degrees for 20-25 minutes.
