HEALTHY CAULI ARROZ CALDO…. Taste exactly like the regular arroz caldo or Lugaw that we used to eat but healthy version. Same cooking instruction, just replace the rice to cauliflower rice (grated cauliflower).

INGREDIENTS:
3 pieces of chicken drumstick (you can add more if you like)
1 ½ cups Cauliflower rice or grated cauliflower
2 cups of water
2 tablespoons fish sauce
1 teaspoon garlic
1/2 tablespoon ground black pepper
1 cup onion minced
3 pieces eggs hard boiled (you can add more if you like)
1 cup scallions green onions, minced
2 knobs ginger julienned
1 tbsp safflower kasubha
2 tbsp olive oil
calamansi (optional for flavor)
pepper flakes (optional for flavor)

INSTRUCTION:
In a pot, heat the cooking oil then sauté the onion, garlic and ginger
Put-in the chicken and cook until outer layer color turns golden brown
Add the fish sauce and cauliflower rice then mix and cook for a few minutes
Pour-in the water and bring to a boil
Stir occasionally and simmer until the chicken is fully cooked (about 30 to 40 minutes)
Put-in the hard boiled eggs
Put-in salt and pepper to taste
Add a little bit safflower for additional color and aroma
Add scallions
Serve hot with garlic, minced scallions, pepper flakes and lemon. Share and Enjoy!
