1 can of chickpeas (15 oz), drained and rinsed
2 tablespoons vegan mayonnaise
1 tablespoon Dijon mustard
1/2 cup chopped celery
1/4 cup chopped red onion
1 tablespoon lemon juice
Salt and pepper to taste
Fresh bread slices or your favorite wrap
Lettuce leaves and tomato slices for serving

🍴 Instructions:

In a large bowl, mash the chickpeas with a fork until mostly smooth.
Add vegan mayonnaise, Dijon mustard, chopped celery, red onion, lemon juice, salt, and pepper. Mix well until combined.
