Smoked Paneer Onion Grilled Sandwich (High Protein)

Ingredients:
• 200g low-fat paneer, crumbled
• 1 onion, finely chopped
• 2 slices protein bread
• 2 tbsp homemade chipotle spread (or store-bought)
• 1 tsp Kashmiri chili powder
• 1 tsp turmeric powder
• 1 tsp tandoori masala
• Salt, to taste
• 2 tbsp curd (yogurt)
• Handful of fresh coriander leaves, chopped
• 1 slice cheddar cheese (optional, low-fat)
• Lettuce or vegetables of your choice
• 1 small piece of hot charcoal + 1 tsp ghee (for smoking)

Instructions:
1. Prepare the Paneer Mixture
• In a mixing bowl, add paneer, onion, Kashmiri chili powder, turmeric, tandoori masala, salt, curd, and chopped coriander leaves.
• Mix well until all ingredients are combined.
2. Cook the Paneer
• Heat a pan and cook the paneer mixture for 4–5 minutes, stirring occasionally.
3. Smoke the Paneer (Dhungar Method)
• Push the paneer to the sides of the pan, creating a small space in the center.
• Place a heatproof bowl or foil cup in the center and add the hot charcoal piece.
• Pour ghee over the charcoal – it will release smoke immediately.
• Cover the pan with a lid and let it smoke for 5–10 minutes.
• Remove the charcoal and bowl. Your smoked paneer tikka is ready.
4. Assemble the Sandwich
• Spread chipotle sauce on one slice of protein bread.
• Layer the smoked paneer tikka, cheddar cheese, and lettuce or vegetables.
• Top with the second bread slice.
5. Grill
• Grill the sandwich until golden and crispy.
• Slice and serve hot.

Tip: This sandwich is perfect for breakfast or a lunchbox, packing around 25g protein!
