Here’s a quick and tasty Palak Rice(Spinach Rice) recipe for you:

Ingredients:

* 1 cup basmati rice (soaked 20 mins)
* 2 cups spinach (washed )
* Coriander (handfull)
* Mint (as per taste)
* 1 medium onion (sliced)
* 1 tomato (chopped)
* 2–3 green chilies
* 1 tsp ginger-garlic paste
* 1–2 bay leaves
* 1 small cinnamon stick
* 2 cloves
* Curry leaves
* ½ tsp cumin seeds
* ¼ tsp turmeric powder
* ½ tsp garam masala
* Salt as required
* Ginger garlic paste
* Lemon juice
* Green pea
* 2 tbsp oil / ghee
* Butter
* 2 cups water

Method:

1. In a water add spinach and boil it for 15 minutes
2. Wash and Soak the basmati rice for 20 minutes
3. In a blender jar add coriander,mint, ginger, garlic, green chilli,boiled spinach and blend it in smooth paste
4. In a kadai or pressure cooker, heat oil/ghee.
5. Add cumin seeds,bay leaf, cloves, cinnamon, curry leaves and sauté for a few seconds.
5. Add ginger-garlic paste cook till raw smell goes.
6. Add sliced onions and sauté until light golden.
7. Add green pea and chopped tomatoes and cook till soft.
8. Add spinach grinded paste and sauté for 2–3 minutes (spinach will shrink).
9. Add turmeric, garam masala, salt,chat masala, pepper powder; mix well.
10. Add soaked & drained rice. Sauté for 1–2 minutes with the spinach mixture.
11. Pour in 2 cups water, mix and cover.
12. Lastly add lemon juice

* Pressure cooker: cook for 1 whistle on medium flame.
* Pot/kadai: cover and cook on low flame until rice is done.
10. Fluff gently and serve hot.
