2 zucchinis, sliced
2 carrots, sliced
2 ripe tomatoes, chopped
2 tbsp olive oil
2 cloves garlic, minced
Salt and pepper to taste
1 tbsp lemon juice (optional)
1-2 tbsp mayonnaise
Fresh herbs (basil or parsley), chopped (optional)
Instructions:
Prepare the vegetables: Slice the zucchinis and carrots into thin rounds or half-moons. Chop the tomatoes into small chunks.
Sauté the veggies: Heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant (~30 seconds).
Cook the carrots: Add the sliced carrots first, sauté for about 3-4 minutes until they start to soften.
Add zucchinis: Toss in the zucchini slices and cook for another 3-4 minutes, stirring occasionally.
Add tomatoes: Stir in chopped tomatoes and cook for an additional 2-3 minutes until they soften slightly.
Season: Season with salt, pepper, and a squeeze of lemon juice if desired. Mix well.
Finish with mayo: Remove from heat and stir in a dollop of mayonnaise to add creaminess and flavor.
Garnish and serve: Top with fresh herbs if using, and serve warm as a side dish or light main.
