This low carb lime pie recipe is a delicious, quick, and easy treat to make. It has no wheat flour (gluten-free), and is very low in carbs. With only 1g of net carbs per slice, it’s a great option for low carb diets, the ketogenic diet, diabetics, and anyone who wants fewer carbs in their diet. 📋 INGREDIENTS:
For the dough:
– 1 cup unsweetened shredded coconut

– 2 eggs
– 1 tablespoon baking sweetener
Bake the dough in the oven at 360ºF / 180ºC for approximately 15 minutes.
For the filling:
– 14 oz/400g unsweetened plain yogurt (about 1 2/3 cups) (https://youtu.be/ngyufhP9Cfs)
– 3.5 oz/100ml coconut milk (Just under 1/2 cup) (https://youtu.be/wvZvabGqYzc)
– Juice of 2 limes/lemons
– 0.4 oz/12g unflavored, sugar-free gelatin (about 4 tsp)
– 2 tablespoons baking sweetener
– Lime/Lemon zest for garnish
Wait for the dough to cool before adding the filling, then refrigerate until firm.
Makes 15 servings, each with approximately 123 calories, 3g of carbohydrates (2g of fiber), 4g of protein, and 10g of fat.
