Recipe
Ingredients
• Black urad dal – ½ cup
• Karamani (black-eyed peas) – ¼ cup
• Fried gram – ¼ cup
• Raw rice – ¼ cup
• Grated coconut – ¼ cup
• Sesame seeds – ¼ cup
• Peanuts – ¼ cup
• Palm jaggery – ½ cup
• Water – 2–4 tbsp
• Dry ginger powder – ½ tsp
• Cardamom powder – ½ tsp

Method
1. Roast the ingredients
• Dry roast urad dal, karamani, raw rice, sesame seeds, peanuts, and coconut separately until golden and aromatic.
• Let them cool and grind to a fine powder along with fried gram.
2. Prepare jaggery syrup
• Heat palm jaggery with 2–4 tbsp water until it melts.
• Strain to remove impurities, then boil again until slightly thick.
3. Mix everything
• Add the ground powder to the jaggery syrup.
• Mix in dry ginger powder and cardamom powder.
• Stir well until it forms a thick mass.
4. Shape the urundais
• Grease your palms with little ghee.
• While warm, roll the mixture into small balls.
