This Thai Noodle Salad Changed My Life | Easy, Healthy & Addictive!

This Thai Noodle Salad is fresh, crunchy, spicy and perfect for meal prep or busy weeknights!

Make this crowd pleasing, better than takeout thai salad using simple ingredients for a quick, light and refreshing meal.

Thai Noodle Salad Recipe

INGREDIENTS:

-200 grams rice stick noodles (1mm size)
(soak noodles in boiling hot water 15-20 minutes & then drain & rinse with cold water)

-1/2 red bell pepper, cut into strips
-1/2 orange bell pepper, cut into strips
-1/2 yellow bell pepper, cut into strips (I did not have this hence it’s not in the video)
-1 small cucumber, deseeded & cut into strips
-1-2 spring onions, sliced on the diagonal
-small wedge of purple/red cabbage, thinly sliced with a peeler
-handful fresh coriander leaves

Thai Peanut Sauce:

-4-6 tablespoons smooth peanut butter
-2-4 tablespoons coconut cream
-1” piece ginger, peeled & grated
-2 cloves garlic, peeled & grated
-1-2 tablespoons Sriracha or hot sauce
-1 tablespoon soy sauce
-1/8-1/4teaspoon toasted sesame oil
-1/4-1/2 teaspoon soft brown sugar
-plenty of fresh lemon juice
-salt
-a few tablespoons drinking water

Garnish:

-a few strips of red, orange & yellow bell peppers
-a few strips of cucumber
-spring onion greens
-fresh coriander leaves
-fresh thai red chillies, deseeded & sliced
-toasted peanuts, chopped
