I truly wasn’t prepared for how obsessed I’d be with protein pancake bowls. I’ve been testing every flavor combo I can think of, but of course I had to do the classic blueberry. Juicy, warm blueberries in every bite… it is so good.
Simple, plant-based, gluten-free, and can easily be made refined sugar-free. Plus, it packs 27 grams of protein! I love pairing it with coconut yogurt or nut butter for a balanced breakfast. Enjoy Xx
Easy recipe (single-serve):
• 1/4 cup oat flour
• 1/4 cup vegan vanilla protein powder
• 1/2 tsp baking powder
• Pinch of sea salt
• 1/3 cup non-dairy milk
• 1/2 tbsp maple syrup
• Dash of vanilla extract
• 1/4 cup fresh blueberries
Bake at 350° for 20–22 minutes. I highly recommend topping with a drizzle of maple syrup.
