Oatmeal Cookies with Chocolate, Dates, Raisins, and Almonds
(Makes 12 cookies)
Ingredients:
Rolled oats — 150 g
Almonds (whole or chopped) — 60 g
Dates (pitted, finely chopped) — 80 g
Raisins — 50 g
Dark chocolate (70% cocoa, chopped) — 50 g
Honey or maple syrup — 60 g
Coconut oil (or butter) — 50 g
Egg — 1 (about 50 g)
Baking powder — 1 teaspoon (about 5 g)
Vanilla extract — 1 teaspoon (optional)
Pinch of salt

Instructions:
Preheat the oven to 175°C (350°F).
In a large bowl, mix the rolled oats, almonds, baking powder, pinch of salt, raisins, and dates.
In another bowl, melt the coconut oil, add honey (or maple syrup), egg, and vanilla extract, and mix well.
Combine the wet mixture with the dry ingredients and mix thoroughly.
Add the chopped dark chocolate and gently mix.
Using a spoon, place the dough onto a baking sheet lined with parchment paper, forming 12 equal cookies.
Bake for 12–15 minutes until golden brown.
Let the cookies cool on a rack.
