For the Salad:
1 cucumber (sliced)
1 carrot (sliced/julienned)
8–10 cherry tomatoes (halved)
1 onion (thinly sliced)
½ capsicum (sautéed or lightly roasted)
½ cup boiled sweet corn
Salt & black pepper powder to taste
1 tsp honey
1 tbsp lemon juice
Lettuce leaves (for topping)
A handful of nachos (for garnish)
For the Creamy Cashew Dressing:
½ cup soaked cashews
Salt & black pepper powder to taste
1 tbsp lemon juice
½ tsp chili flakes
½ tsp dried parsley
½ tsp dried oregano

Make the dressing: Blend soaked cashews with salt, pepper, and lemon juice until creamy. Transfer to a bowl, mix in chili flakes, parsley, and oregano.
Prepare the salad: Combine cucumber, carrot, cherry tomatoes, onion, capsicum, and sweet corn. Season with salt, pepper, honey, and lemon juice. Toss well.
