High-Protein Pesto Pasta 🤤
Prep time – 20 mins
Ingredients:
• Farfalle (pasta) – 200-250 g
• Edamame – 1 bowl
• Basil leaves – 1 cup
• Walnuts (roasted) – 6
• Olive oil – 2 tbsp
• Lemon juice – 2 tbsp
• Garlic cloves – 8-10
• Salt to taste
• Cherry tomato – 5-6
• Butter – 1 tsp
• Parmesan Cheese (garnish)
• Chilli flakes & oregano to taste
Recipe:
1. Boil farfalle in olive oil and salted water until al dente. Reserve ½ cup pasta water, then drain.
2. In a blender/processor, add edamame, basil, roasted walnuts, garlic, olive oil, lemon juice, and salt.
3. Blend into a smooth paste. Add a splash of pasta water if needed for a creamier consistency.
4. Heat butter in a pan, add chilli flakes, oregano & toss in cherry tomatoes. Sauté for 2–3 minutes until slightly blistered.
5. Add drained pasta to the pan, spoon in the walnut pesto, and mix well.
6. Adjust consistency with reserved pasta water. Taste and adjust seasoning.
7. Serve warm, garnished with extra basil, parmesan cheese & a walnut crumble on top. 🌿
