These Red Lentil + Amaranth + Cottage Cheese Pancakes are soft, nutritious, and packed with flavor. Adding a touch of oat flour keeps the structure light and fluffy — no flat pancakes here!

✔️ Wholesome & Filling

Ingredients:
½ cup red lentils (soaked 3–4 hrs, drained)
½ cup amaranth flour
2 tbsp oat flour
½ cup cottage cheese
1 egg (or flax egg)
2–3 tbsp honey or maple syrup (optional)
1 tsp vanilla extract
1 tsp baking powder
¼ cup milk or almond milk (adjust as needed)

Method:
Blend soaked red lentils with milk until smooth.
Add cottage cheese and amranth flour and quick blend it.
Mix blend batter with egg,vanilla,oat flour, baking powder → batter should be thick.

Cook small pancakes on medium-low heat for 2–3 minutes each side until golden and fluffy.
Serve with fresh fruit, yogurt, or honey/ maple drizzle.
