5 easy, cheap and vegan lunch ideas for all the college students out there! As college students, w are sometimes (or always) on a tight budget so I thought I would give you some ideas of super easy meals you can do for your week. All these meals can be prepared within a couple hours and you’re set for the week. This is basically lunch meal prepping but a little more fun since each lunch is different. All the recipes are written, just keep en reading!
MONDAY: Falabel and Taboulé Bowl
for the falafels:
– mix falafel mix with water and let stand for 10 minutes
– form balls and fry (or bake) until well cooked
for the taboulé:
– cook couscous
– add in tomatoes, lots of parsley, diced red onions and olive oil
– season as you wish and mix well
TUESDAY: Fajitas Bento Box
for the fajita veg
– stir-fry sliced white onion, green bell and smoked tofu strips for a few minutes
– add in salt, pepper and chili powder
for the coleslaw
– mix coleslaw veg with some mayo and season well
WEDNESDAY: Potato Salad
for the potatoes
– dice some white potatoes and bake at 425 for 30-40 minutes, let cool
– in a bowl, mix baked potatoes, mayo, beans, daiya shredded cheddar and coleslaw veg
– season with salt, pepper
THURSDAY: Salad Jar
– in a mason jar, add some dressing
– layer broccoli, grape tomatoes, black beans and romaine lettuce
FRIDAY: Macaroni Salad
– cook macaroni and let cool
– mix in veg (carrots, broccoli, red onion)
– mix in mayo and Daiya shredded cheddar
– season with salt and pepper
