Hello there hi I’m back! Today’s video features 5 simple, satisfying and relatively healthy breakfast ideas. There’s lots of savory ideas here, like shaved tofu bagels and homemade vegan cottage cheese, but also sweet meals like salted caramel oats and skillet apple granola.

And we can’t forget about the fact that I went to Porto halfway through the video, so there’s some fun cafe restaurant brunch type food to inspire you as well. Enjoyyyy!

⭐INGREDIENTS & NOTES⭐

#1 Shakshuka Inspired Bagels 0:33

2 store bought bagels of choice (i did sesame)
200g (7oz) tofu, cut into shavings using a cheese grater
a little bit of veg oil for the (non stick) pan
generous dash of each: ground cumin, paprika, pepper, chili (or to taste)
350ml (1 ½ cups) of your fave store bought marinara sauce
2-3 handfuls baby spinach
2-3 tbsp vegan pizza cheese, optional
if needed – a splash of water to thin the consistency
if needed – salt, pepper to taste

1 avocado
chili crisp oil, optional
sesame seeds, optional

→ yields 2 bagels

#2 Apple Skillet Granola 2:00

1 apple (peeled if preferred)
1/2 tbsp vegan butter or coconut oil for the pan
5-6 tbsp rolled oats
¼ tsp cinnamon
pinch of salt
1 drizzle syrup of choice (maple/date/rice etc.)
1 additional tsp of vegan butter (to make it crunchier)

yogurt of choice (i did vanilla soy)

#3 Cottage “Cheese” Toast 3:19

sourdough bread (or bread of choice)
1 of those large yummy summer tomatoes (what are they called)
salt, pepper
basil

for the tofu “cheese”
300g silken tofu (10.6oz)
1-2 tsp white miso paste
1 tbsp white wine vinegar
1 tbsp fresh lemon juice
1 tbsp cashew butter
generous pinch of salt, or to taste
200g firm tofu (8oz)

→ yields enough for ~ 4-5 toasts

#4 Salted Caramel Oats 4:28

for the caramel:
14 Deglet noor dates (i counted them lol) or ¾ cup (~110g)
a few drops vanilla aroma or 1 tsp vanilla extract
2 tbsp nut butter (peanut, almond, cashew)
60ml oat milk (¼ cup)
125ml water (1/2 cup) , more if needed
¼ tsp salt
pinch of cinnamon
⅓ cup (80ml)warm water (not HOT) more if needed
1-2 tbsp melted coconut
1 tsp white miso paste

for the oats:
50g oats (½ cup)
generous pinch of salt
dash of cinnamon

#5 Focaccia Breakfast Sandwich 9:18

for the Bread:

for the lazy aioli:
2-3 cloves garlic, minced
2-3 tbsp fresh lemon juice
2-3 tbsp plant based mayonnaise*

*! for a lighter version you could try unsweetened soy yogurt instead of the mayo!

for 1 sandwich:
½ avocado
bagel seasoning
1 handful mushrooms, chopped
a little veg oil for panfrying the mushrooms
salt, pepper for the mushrooms
1 tsp finely chopped red onion
1 medium tomato, finely chopped
microgreens
a few tsp lazy aioli!
