Did you know that desiccated coconut was a major innovation? The process of drying and shredding coconut flesh to create a shelf-stable product was developed in the 19th century, allowing this versatile ingredient to be shipped worldwide for use in baking and confections.

Ingredients:
• 80g of desiccated coconut
• 2 small bananas
• 1 tbsp flour
• 40g of 85% dark chocolate

Notes:
• Shaping: The mixture will be sticky. Use your hands to press the mixture into small, stable baskets.

Instructions:
1. Prep Oven: Preheat your oven to 160°C (320°F).
2. Mix: In a bowl, combine the mashed bananas, desiccated coconut, and flour. Mix thoroughly with your hands until the ingredients are well combined.
3. Shape & Bake: Form small baskets with your hands and place them on a baking tray lined with parchment paper. Bake for 20 minutes.
4. Add Chocolate: While the baskets are still warm, melt the dark chocolate and pour it into the center of each basket.
5. Chill: Place the finished baskets in the fridge for at least 1 hour to set before serving.
