Caramelised onions and mushrooms sandwich ✨
Caramelised onions and mushrooms :
In a pan, heat 2 tsp oil
Add 2 tsp chopped garlic
2 sliced onions
Sauté till it turns brown in colour / caramelised
Add 300 gms (approx) sliced mushrooms
Add salt and 1 tsp home made chilli oil (recipe mentioned below)
Sauté everything well or till oil separates in the pan
Hung curd Spread:
1 cup hung curd
1 tsp oregano
1.5 tsp chilli flakes
Chopped coriander leaves
1 tsp crushed garlic
Mix everything well and the delicious healthy spread is ready
Home made Chilli Oil :
Heat 1 cup oil (any neutral oil that is available at home)
Add 1 small cinnamon stick
2 bay leaves
2 star anise
1/2 inch ginger
Half a onion
Infuse all these spices in the oil on low flame for 25 minutes approx ( stir occasionally)
Strain out the hot oil
Now in a mixing bowl,
Take 1/2 cup chilli flakes
1 tbsp chilli powder
1 tbsp kashmiri red chilli powder(optional)
3-4 minced garlic
2 tbsp slighlty toasted sesame seeds
A pinch of salt
Pour the sizzling hot infused oil over the spice mix and stir it well
Store it in a air tight container in refrigerator and can be used for upto 2-3 months
Assembling the sandwich :
On a slice of bread, spread hung curd mix and then good amount of caramelised onions and mushrooms. Add a leaf of lettuce (optional)
Cover it with another slice
Toast it using little ghee or butter and
