Ingredients:
• Onions – 2 (sliced)
• Ginger & green chilli – 2 tbsp (finely chopped)
• Kashmiri red chilli powder – ½ tbsp
• Chaat masala – ½ tbsp
• Mix sabji masala – ½ tbsp
• Cumin seed powder – ½ tbsp
• Achar masala – 1 tbsp
• Carom seeds (ajwain) – ½ tbsp
• Besan – 2 tbsp
• Kalonji – as needed
• Fresh coriander leaves – chopped
• Wheat flour dough – as required
• Ghee – for roasting
Method:
1. Add salt to sliced onions and rest for 5 minutes. Squeeze out excess water.
2. Mix onions with ginger, green chilli, besan, and all spices.
3. Roll out one roti, spread the onion mixture, and cover with another roti.
4. Cut into strips, stack, and roll out again to form a lachha-style paratha.
5. Sprinkle kalonji and coriander on top, then roast on a hot tawa with ghee until golden and crisp on both sides.
6. Serve hot with dahi or green chutney.
