Sweet and Savory Stir-Fried Eggplant and Green Peppers

Ingredients
2 eggplants
8 green peppers
About 2 cm fresh ginger

Seasoning Mixture
1 ½ Tbsp water
1 ½ tsp chicken stock powder
1 tsp sugar
1 ½ tsp soy sauce
1 ½ tsp Worcestershire sauce
1 tsp cornstarch
A small amount of sesame oil
To Add Later
1 tsp doubanjiang (chili bean paste)

Instructions
1.Cut the eggplants in half lengthwise, then slice diagonally into 1.5 cm pieces.
2.Remove the stems and seeds from the green peppers and cut them in the same way. Julienne the ginger.
3.Heat some oil in a frying pan and stir-fry the eggplant until softened. Remove and set aside.
4.In the same pan, return the eggplant and sauté the ginger until fragrant. Add the green peppers and stir-fry.
5.Return the cooked eggplant to the pan and pour in the prepared seasoning mixture gradually, stirring well to coat the vegetables.
6.Finally, add the doubanjiang and mix until everything is evenly combined. Serve hot.
